BBQ RIB EYE WITH SZECHUAN PEPPER, HONEY AND GINGER

Ingredients
  • 2 x 220 thick cut Manning Valley Naturally rib eye steaks
  • 1 Tbsp Szechuan peppercorns
  • 2 inch knob of ginger, peeled and finely chopped
  • 1 Tbsp honey
  • 4 Tbsp soy sauce
  • 2 limes cut into wedges
Method
  • Pound the Szechuan peppercorns in a mortar and pestle into a coarse paste, add in the chopped ginger, honey and soy. Mix well.
  • Cut the rib eye into large cubes, removing any thicker pieces of fat. Pour over the marinade and mix well. Allow to sit refrigerated for an hour before threading beef onto skewers.
  • Heat grill or BBQ and cook skewers over direct heat, rotating every few minutes. Serve with a little more soy and fresh lime.
